By now, you may have heard of one of the newest and coolest superfoods in town: Quinoa.
Quinoa is a versatile grain that makes for a complete meal when combined with your favorite proteins and vegetables or fruits. Here’s a quick and easy recipe:
1 cup quinoa (cooked according to package directions)
1 can tuna packed in water
1 cup spinach
½ cup mushrooms (brown button or shiitake)
½ cup broccoli
1 tsp coconut oil or olive oil
2 cloves garlic
- Heat garlic in oil.
- Place tuna. Add broccoli and mushrooms.
- Add the spinach and cooked quinoa.
- You may add sea salt and pepper to taste if you wish.
